RECIPE OF THE MONTH: Guacamole Classico!

- 6 large fresh avocados (fairly soft- not too hard)
- ½ bunch fresh cilantro- finely chopped
- 1 ½ ounces yellow onion- small diced
- ½ lime
- 1 ounce minced garlic
- 1 ounce chopped fresh serrano pepper
- 1 roma tomato- diced
- Salt and pepper to taste
Peel and seed avocado immediately before making guacamole to preserve the freshness and prevent any browning.
Place peeled avocados into a shallow mixing bowl.
Add all remaining ingredients and stiff whisk it until desired smoothness.
Place into clean plastic storage container and cover with Saran Wrap by pressing down until it’s touching the entire surface to stop oxidation. Add some fresh lime juice to preserve left overs and pour what you are serving into a bowl and enjoy!
About the Chef:
Chef Sergio Bermudez grew up cooking with his mother from a youth age in Oaxaca, Mexico. There he learned traditional recipes of the Old World, as well as new fusions from all regions in Mexico. Wanting to take his recipes to another level, Sergio moved to New Jersey in 2000 and continued to perfect his craft in family restaurants, until he moved to Seattle in 2004. Sergio has been a part of the Mexico Cantina team since 2005 and has been able to bring some amazing fusion dishes to the eclectic menu that Mexico Cantina has to offer.
