National Garlic Month

RECIPE OF THE MONTH: Japanese Miso Garlic Prawn!

Provided by: The Bite Cooks! Chef Aaron Pate, Shiro's Sushi



  • 2 cups butter
  • 1 cupe Miso
  • 1 clove garlic
  • 4 sprigs Parsley
  • Prawns
  • Panko breadcrumbs

Ponzu Sesame Dressing

  • 5 tsp Ponzu
  • 1 tsp Sesame Oil
  • ½ tsp yuzu Koshyo
  • 2 tsp sugar


Mix room temperature butter and miso with minced garlic and parsley to create the Miso batter. Set aside.

Butterfly the prawns, then score to prevent curling when cooked.

Spread about half a teaspoon of miso batter on the prawns.

Sprinkle panko on top and back at 350 for about 5 minutes or until cooked through.


About the Chef:

The American addition to the Shiro's Sushi team, Aaron Pate is from Hawaii and started making sushi in 1996 at San Sei in Maui (where he remained for 13 years). From 2009-2011, he lived in Japan and worked at Nishi-Azabu Gonpachi in Tokyo. He came to Seattle in 2011, where he worked for restaurants Kisaku, Marinepolis Sushi Land, and Nishino. He joined Shiro's as a chef in May of 2014.
